Funchoza and Vegetable Salad – A Vitamin Boom
This glass noodle salad with vegetables and chicken is a simple and delicious dish that's easy to prepare for lunch or dinner, using this recipe with step-by-step photos.
Funchoza - rice noodles (glass noodles) do not require cooking, just pour boiling water over them and leave them in boiling water for 10 minutes.
Cooking time is 30 minutes. The ingredients listed in the recipe make 4 servings.
Ingredients:
- chicken fillet – 230 g;
- funchose (rice noodles) – 130 g;
- red bell pepper – 150 g;
- onions – 120 g;
- carrots – 130 g;
- fresh cucumber – 150 g;
- parsley, dill – 1 bunch;
- chili pepper – 1 pc.;
- garlic – 2 cloves;
- salt, olive oil, black pepper, soy sauce to taste.
How to make a salad with funchose, vegetables, and chicken
Place the rice noodles (funchose) in a deep bowl, add a teaspoon of salt, and pour in 1 liter of boiling water. Let the noodles soak for 10 minutes while we prepare the remaining salad ingredients.
Cut the chicken breast fillet into thin strips. Heat two tablespoons of olive oil in a frying pan, drop the strips into the hot oil, quickly fry until golden brown, transfer to a plate, and sprinkle with salt to taste.
In the same frying pan, place the diced onion, sauté for 5 minutes, add the garlic pressed through a garlic press and finely chopped chili pepper.
Chop the carrots into thin strips. When the onion is almost translucent, add the carrots and fry for 5-7 minutes.
Add a diced red bell pepper to the carrots and onions, season with salt or soy sauce, freshly ground black pepper, and cook for 5 minutes.
Place the noodles in a sieve and shake off any excess water. Rice noodles have a wonderful property: they never stick together, even without oil.
Place the funchose in the frying pan on top of the vegetables.
Add fried chicken fillet.
Thinly slice a fresh cucumber and finely chop a bunch of fresh herbs. Add the cucumber and herbs to the remaining ingredients.
Mix the ingredients, sprinkle with black sesame seeds and serve immediately.
