Fluffy apple charlotte with kefir
I used to always make Charlotte pie according to the classic recipe: separating the whites from the yolks and whisking the dough for at least 5 minutes with a mixer. However, I recently discovered that you can bake a delicious and fluffy apple charlotte with kefir in the oven, and the recipe is much simpler. I had kefir on hand, so I started cooking right away.
I used homemade chicken eggs. They give the dough and the baked goods a more appealing color. To make the charlotte fluffy, I added baking soda to the dough, but didn't use vinegar—the kefir did that. If you don't have baking soda and prefer baking powder, feel free to add it, just double the amount.
My apples are home-grown and very fragrant, so I advise you to use home-grown fruit, they taste much better and their aroma is simply amazing.
Ingredients required:
- apples – 2-3 pieces;
- chicken eggs – 3 pieces;
- granulated sugar – 150 grams;
- flour – 150 grams;
- kefir – 150 milliliters;
- baking soda – 0.5 teaspoon.
How to bake a charlotte with kefir
Crack the eggs into a high-sided bowl. Turn on the mixer and beat for 30 seconds. Add the sugar and beat until the mixture triples in volume.
Then pour the kefir into the beaten egg mixture, add the baking soda, and beat again for 10 seconds.
Add flour to the dough. Mix well using a silicone spatula or a regular tablespoon.
Pour the batter into a baking pan (either metal or silicone will do). If your pastry sticks to the pan, you can grease it with butter or line it with parchment paper.
Wash and peel the apples. Cut them into pieces and place them in the dough.
Place the Charlotte pie in an oven preheated to 190 degrees Celsius. Bake for 30 minutes.
Carefully remove the finished charlotte from the mold, let it cool, then cut into squares and serve.
