Oven-baked zucchini and chicken casserole is a simple, yet delicious and juicy dish made with boiled meat, vegetables, and cheese.

If you made broth or chicken soup the day before, try making this simple dish with leftover chicken the next day – you won’t regret it. Baked chicken, which is sometimes left over from a holiday feast, is also suitable for this recipe.

Ingredients:

  • boiled chicken – 500 g;
  • zucchini – 500 g;
  • bell pepper – 200 g;
  • milk – 120 ml;
  • wheat flour – 35 g;
  • chicken egg – 1 pc.;
  • cheese -50 g;
  • butter, spices, salt.

How to make a zucchini and chicken casserole

Remove the chicken meat from the bones and tear it into shreds or chop it finely. Any skinless, cooked chicken cut will work for this dish.

Cut the zucchini into thin strips. Remove the seeds from the bell pepper and dice it.

Add chopped vegetables to the bowl with the chicken meat.

Season the vegetables and meat with pepper, salt, sweet paprika and dried Provencal herbs (a mixture of thyme, rosemary, and oregano).

Separately, mix a fresh chicken egg with wheat flour and milk, adding salt to taste. Whisk the ingredients together until you have a runny batter, like thin pancake batter.

Grease a non-stick baking dish with butter and sprinkle with breadcrumbs or wheat flour to prevent the casserole from burning. Place the ingredients in the dish.

Pour the batter over the vegetables and meat, shaking the pan to distribute it evenly. Grate the hard cheese finely and sprinkle it over the casserole.

Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit). Place the casserole dish in the preheated oven and cook for about half an hour—the chicken is already cooked, so the other ingredients don't need much cooking. After 30 minutes, the crust will be golden brown, and you can remove the dish from the oven.
